What and What Not To Freeze

Freezing is a great way to retain the texture, flavor and color of foods and can help you with your weekly menu planning, so avoiding waste of food, freeze. But make sure items are well wrapped to protect them from freezer burn caused by prolonged exposure to freezing cold air.

But remember:-
  •  Once defrosted don’t re-freeze
  • Never refreeze defrosted meats or fish.
It's important to remember these to avoid food poisoning and it's worth  that food containing ingredients that have been defrosted can then actually be frozen again once they have been cooked. So defrosting some beef mince, cooking a spaghetti bolognese with this mince beef and then freezing, it is perfectly okay.

What Not To Freeze:-

  • Softe herbs:- Basil, chives, parsley, lose colour and structure and are best not frozen.
  • Vegetables with a high water content such as tomatoes, celery, lettuce, onions, peppers, potatoes, radishes, sprouts, and salad greens. Don’t freeze well as freezing damages the structure. The moisture that keeps the food crisp and intact, doesn't behave the same way after thawing.
  • Dairy:- Custards, blocks of Cheese, yogurt, eggs in the shells, Mayonnaise, Sour cream and Salad dressing,  all of this dairy products freeze horribly. The Curds will separate from whey and instead of the creamy dish of yogurt you put in the freezer, after defrost you will find a dish of separated strangeness.
  • Fruits:- Apples, grapefruit, grapes, lemons, limes, watermelonoranges and cucumbers .

What To Freeze:-

Dishes based on grains, meats, and/or vegetables freeze very well. Remember to fill the container that you're going to freeze. This prevents freezer burn and saves space in your freezer. Don't forget to label everything, especially put dates.

Once reheated, these leftovers will likely be too dry to eat on their own. Instead, re-purpose them in soups, sauces, and fillings.
